What is Neckwurst?

The rolls of fat on back of the neck of an overweight individual that looks like a pack of hot dogs.

While at the all-you-can-eat buffet, I couldn't help but notice the neckwurst on the patron who had just gotten a fifth, heaping plate of food. Like he needs more food!
