What is Saignee?

A Wine making process in which you bleed off or siphon some red wine juice after a short period of contact with the grape skins. The color of wine is derived from the color in the skins, so the juice is a pink color, rather than red. This process is how rosé wines are made.
Mike had to saignee from the several bins of sangiovese grapes while in a heavily bee infested environment.
