a penis enchilada occours when someone from taco bell sticks their penis in your enchilada. sometimes because you cannot pronounce the words fajita, quesadilla, enchilada, or other foods served there. mostly because you make fun of their accent while your at the drive thru, and you dont realize your still on the speaker.
can also be used as a putdown.
